Gorgonzola-Spinach Turkey Burgers with Sweet Potato Fries

In my meal planning post, I promised to share the recipe for my gorgonzola-spinach turkey burgers. Colorful, healthy, and filling, these burgers have it all.

Andrew likes to eat them on whole wheat toast, but I’m just as happy to skip the bread all together. Topped with sauteed onions, these taste like indulgence but are so much better for you than a beef patty with a slice of cheese.

 

Gorgonzola-Spinach Turkey Burgers

1 lb. ground turkey breast                                                                                                                 1 packed c. fresh spinach, chopped                                                                                               1/3 heaping c. gorgonzola                                                                                                              salt & pepper to taste

In a medium bowl, mix turkey, spinach, and gorgonzola until thoroughly combined.

Divide into four sections. Shape each quarter into a patty. I like to make the middle a bit thinner so that they stay flat when they cook.

Look at all that green goodness!

Oil a large pan and heat it over medium-high. (You can also do these on the grill, just make sure to spray/oil it, as the turkey has less fat than beef and may stick.)

Fry (or grill) the burgers until cooked through – about 4 minutes on each side.

 

Sweet Potato Fries

Preheat oven to 425 degrees.

Wash two sweet potatoes well. Slice into fries – however thick or thin you like. Toss sweet potatoes with a teaspoon or two of olive oil, plus a pinch of salt and pepper. Spread on a baking sheet and roast for 20-25 minutes, until potatoes are cooked and crispy.
